"Almost" Halloween

So... Halloween was an interesting time in our house growing up. Being baptist-like, messianic-ish Evangelicals in Central Florida, our spooky celebrations were a bit more Hallelujah House and alot less Halloween Horror. That being said, we were allowed to decorate cupcakes and eat candy. So, this year I got into the festivities early. 

I love this recipe, because it uses zero eggs and creates a lighter cupcake. I caved and bought store-bought frosting this time around for ease in decorating and piping, but there is an excellent frosting recipe that is has been my go-to on the Wiliams Sanoma site. 


"I Can't Believe They're Not Pagan" Cupcakes
1 1/2 cups all-purpose flour
1 cup white sugar
1/4 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup vegetable oil
1 teaspoon vanilla extract
1 teaspoon distilled white vinegar
1 cup water

Prepare Batter: Preheat oven to 350 degrees. Lightly grease cupcake tins or line 'em up. Sift together the flour, sugar, cocoa, baking soda and salt. Add the oil, vanilla, vinegar and water. Mix together until smooth.

Fill Cupcakes: Fill 'em up 2/3 of the way. 

Bake: Bake at 350 degrees for 10 minutes depending on your oven.

Scarf. I eat these up plain or with frosting or while frosting or...There is a vanilla cupcake recipe that is eggless and uses almond milk and coconut oil, but I didn't enjoy them as much as using a store-bought vanilla mix with 3 egg whites. (I used that recipe here.)

I frigan love Halloween, scary flicks, fake blood and plastic fangs. Everything in moderation, folks. Nice article by Relevant Magazine.

I totally thought of you guys because if you don't ice 'em, they won't spoil as fast out of refrigeration like a normal cupcake would due to not having eggs...and...eggs are getting expensive. We pay $1.99 a dozen here!

I just did the math, and eggs are $2.13/ dozen here. We usually buy by the crate - 800 naira/ per crate, which has 30 eggs in it, straight from the chicken. As evidenced by the feathers and chicken poop on them. (Ooh, I feel another Foodie Friday coming on! ;) )

Totally have NO RESERVATIONS about trying this recipe. (Grrr.)

Okay, I have to know - are those REALLY YOUR cupcakes?! Like you actually made them and took the picture? Because I can't stop looking at them and thinking that they look so amazing and professional and that maybe there's hope for mine to look that cool. I mean, if we could get all those cool decoations here.

Promise it's all our handy work. Uneven piping and all. I used ziploc bags to pipe, which I'll never do again....lol.

It was so fun!
