Stephen has lost 5.5 lbs in 11 days and I've lost almost 4—on top of what we've lost since Jan. I don't know if that's amazing, beginners luck or just something that happens at first, but we have decided to stop weighing ourselves and just focus on the clean eating and trying to work out twice a week. This is not just about weight loss and I don't want to get discouraged if the scale doesn't continue sliding down. The benefits outside of weight gain have been pretty amazing in such a short time and are actually what makes us feel like we have finally found something we can stick with. Better digestion, better sleep, better mood, feeling lighter, a little bit more energy and being...er...uh....regular. :) It's unreal.
When the 30 days are over, we have talked about integrating whole or soaked grains, natural sweeteners and fermented dairy only on weekends, but keeping this up during the week as our baseline. Refined sugar and processed foods only on major holidays or rarely—if desired at all. (a HANDFUL of times a year?) I can see us doing 30 day detoxes like this at least once a year to reset our bodies if needed.
I calculated that would be organic/paleo/whole for more than 75% of our diet. I really hope we can do it. I hope our family joins in, too, because it would make life SO much easier. lol... Dairy, refined sugar and processed foods look like things of the past. My body just can't tolerate them anymore. I never thought I'd admit that.

Organic, nitrate free bacon which tastes like the bomb by the way & oranges - Trader Joe's chili lime chicken burger on a bed of spinach, sundried tomatoes, onions/peppers and guac puree with fresh garlic and pomegranate seeds...
- Out for dinner tonight...Date night... Yay!
