Day 18

Okay...more than halfway through. Coming up on Stephen's Spring Break. It will be tough to turn away sweets. There was a sale on frozen strawberries, so I caved and made a frosty coconut strawberry drink after dinner tonight. All compliant—but, I know maybe it could be perceived as caving to "dessert cravings." I'm more interested in the nutritional aspects of the program than the psychology...and I want this to be sustainable. 

This was a winner dinner... makes up for the cauliflower rice fiasco.
Rock and roll:
  • Made more of those scrambled egg muffins for breakfast. Stephen likes to take them to work.
  • Seedy cravings today... Pumpkin seeds for snack with a few raisins 
  • Orangey spinach pine nut salad for lunch with a pickle
  • Mojo pork tenderloin and plantains with balsamic drizzle for dinner. More salad with a red wine vinaigrette
  • Coconut strawberry drink made with coconut milk, frozen strawberries and pineapple juice

Egg muffins look good - I will have to try those. Would make mornings easier for sure! Trying to plan ahead now, even thought we're restarting again but not until May. You've got this!
